Holiday Finger Food: Ways to Utilize Christmas Leftovers into NYE Appetizers
What types of bite-sized appetizers can I prepare for New Year’s Eve using my Christmas leftovers that will still feel special?
Party snacks doesn't have to be fancy, so New Year's presents a great opportunity to use up what's left. The main guideline is to stick to items to just one bite—guests don't want to handle a fork. Guests just want a big hug of hearty fare with a luxurious touch.
If you have a bit of smoked salmon left, place it on blinis and crown it with lumpfish caviar. Mini fishcakes are also an ideal choice: Whether you've got remaining fish or flaked salmon, mix it through mashed potato, blend with fresh herbs, lemon, and fried leeks, then coat in panko and fry until golden.
You could also get creative with croquetas. Make the bechamel a few days ahead, then use remaining pork, poultry, or foraged fungi for the interior. Blitz stale bread into breadcrumbs to coat them, then cook until crisp. Sausage roll fillings are another natural home for those crumbs, or use them as a coating for chicken pieces. For flavour, all you need a bit of lemon zest and thyme, and they'll sing so much more. As an aside, croissants make excellent coatings, too.
One beloved treat at this time of year is a post-holiday sandwich, and that can continue after Boxing Day. Place some ham and turkey in an airtight container and store in the freezer. While you're at it, reserve some berry relish and sweet glaze in the fridge. When needed, thaw the meat, then place it in a hot oven with the saved glaze for a brief period. Let it cool and cut into thin pieces, then lay on top of some sourdough and start building sandwiches with lots of cranberry sauce. Cut into bite-sized pieces for a surefire hit.
Leftover turkey, meanwhile, could be turned into a zingy salad. There’s always a bit of turkey leg left over, and it's perfect for something punchy. Pull the meat, then crisp it slowly in a pan, and toss with remaining sauce thinned with lime juice, a spoonful of soy sauce and a little spicy oil. Finish with fresh herbs and some green onions, and present in small lettuce cups.

Vegetables, meanwhile, can be dressed up and fit for a party with a big batch of bubble and squeak. Mix all your remaining vegetables with fresh herbs, then season and add flour. Stamp out portions to roughly the size of small rounds, then keep in the icebox. Refresh in a hot oven for a short time and top with your choice of topping—perhaps sliced beef and sharp horseradish. A good tip, though: set some aside for a late breakfast the next day.
